Amaro is one of the beverage world's most overlooked categories. Made across Italy in styles that reflect each region's native herbs and other aromatic additives, this liquer is mostly used as a mixer in cocktails here in the US. However, those in the know will wax about the unique pleasures of a good after dinner amaro. One such example is the Vecchio Amaro del Capo ($35) from Caffo in Calabria, in the toe of the Italian boot. This extraordinarily complex and nuanced elixir is somehow sweety, bitter, and dry without having too much of any of those qualities. Dried orange peel, licorice, juniper and clove come across in waves that just won't quit. Served from the freezer over an ice cube, it will expand your dinner quests' minds and prepare all for a good night's sleep. Outstanding.
